Tell us about Saltire Hospitality?

Saltire Hospitality is a leading Scottish wedding caterer, this year we celebrate an incredible 21 years in the industry, with 4th July 2021 marking our official birthday. We have the honor of working with so many wonderful couples on their special day! We are immensely proud of our extensive experience and knowledge of wedding catering, and it is our eye for detail that gives us the ability to make sure each and every couple working with us has a truly unique experience. First and foremost, we are family owned and family run company therefore getting to know our couples is hugely important, it is the personal touches that we believe matters the most. No two wedding are the same and it is our mission to design our couple’s wedding day to reflect their very own ideas and wishes. 

What’s a typical wedding day like for you?

A great one! Kate, our lovely Wedding Planner will work closely with our couples throughout the build up to a wedding day, finalising all details and requirements such as timings, room layouts, menu creation and finer details. On the wedding day itself we have a full hand over to one of our dedicated Event Managers- who are all simply amazing! Our Event Manager will work closely with the venue, front of house team and our chefs to ensure everything runs smoothly and all according to plan. Weddings are full of love and so much happiness, it’s all about creating those happy memories and we love being part of this, it’s so special! We are on-site from mid-morning to over-see the room set up, food preparation, finishing touches right through to event delivery- our job is not complete until the last guest leaves.  

How do you come up with your menus?

Quite simply because we are constantly surrounded by gorgeous food! With two production kitchens plus our very own bakery and patisserie production- there is always someone cooking up something fabulous or baking something delicious. We have a love affair with food, and we absolutely love to get creative! Our Executive Chef, Bran, works closely with our local Scottish suppliers, all of which he has personally picked, this ensures we can promise our couples the use of only the best produce and ingredients within our menus, with full traceability of exactly where this is coming from. We love to showcase fine Scottish produce and getting creative with our menus is what we are all about! Give us a challenge we love it!

What do you love most about catering for weddings?

Seeing the smiles and receiving great feedback from our services is truly the best feeling ever! Food plays such an essential role in the wedding day it’s so important to get it right so when the couple and the guests are happy – so are we!

What is your most popular starters, mains and dessert?

During the pandemic, Bran designed a tremendous dish as part of our dining at home boxes for our Valentine’s day Date Night Dining Experiences – so much so it’s now part of our wedding brochure – Duo of Scotch beef, filled medallion, 12 hour braised Scotch beef, dauphinoise potato with maple glazed carrots and wilted kale – delicious! This was matched with a chocolate bomb bursting with white chocolate and passion fruit!

Whose wedding would you really like to do the food for; past, present or future?

As we have already catered for the Queen it’s hard to say! For us, all our couples are equally so important to us and since the pandemic we have missed working with our clients so much that we are just looking forward to catering for more couples who truly deserve the best day ever and grateful that we can continue doing what we love to do!

What parting advice would you give wedding couples when thinking about catering at the Royal College of Physicians of Edinburgh?

This venue oozes elegance and any couple choosing this as your venue- what an incredibly great choice- you and your guests will be stunned by this spectacular set up. We have catered here for over 21 years, this venue is so special to us, we recommend using as much of the space as possible, each room is so exquisite and full of character!
