What is the most empowering element for Pinkerton’s as an all-woman run business?
Having worked in bigger kitchens previously surrounded by all male co workers, I had the pleasure of joining Pinkerton’s in 2017. Pinkerton’s has always been a woman run business and when I took over from Jill in 2019 I was thrilled to continue this. We are a small team which allows us all to share our ideas and work together to create the menus for each client individually.
How do you incorporate sustainability into your food & drink options?
All our suppliers are local, we work hard to support the smaller businesses as we understand the struggles as a similarly small business.
Tell us about your favourite menu ever created for a wedding.
Each wedding has it’s own quirks and we love to work with our clients to make their dreams come together! During lockdown when there was strict guidelines, we had the pleasure of catering a micro wedding that specifically requested homemade pasta with squid ink. This was no easy task but we took great pleasure in watching the guests (around 10 people!) enjoying this element. I also love a cocktail station in the evening reception served in the new library, especially an espresso martini to get the party started!
What makes your service unique?
As a small company, we have a very personable relationship with our clients. I answer all the emails (it may take a day or two!) and I also run the weddings on the day. This allows us to create this unique relationship with individual clients and take into consideration all the tiny details that they would like to add to their special day.
How have Pinkerton’s given back to the community?
During lockdown we worked closely and supported StreetSoccer Scotland to help provide meals for those in the community that were struggling. We worked with local suppliers and managed to cook some delicious homemade meals.
What do you personally love about the catering industry?
I love the variety in my job and the positive impact we can have on a couple’s big day. Food is such an important part of our lives and is a great way to get all friends, family and loved ones together. we take great pride in making the food a memorable part of individuals day from conferences to drinks receptions and weddings.
What are some of the favourite vegan dishes?
We take great attention in including all dietaries and allergens when planning the menus with our couples. Our vegan menus are equally as exciting and include so menu colourful dishes! A couple of my favourite dishes include our homemade beetroot and lemon hummus and then our Chocolate tofu mousse is my all time favourite and many times we have vegans asking if it is definitely vegan since it’s so delicious!
What food & drink is best for concentration & lifting energy during conferences?
We believe our Brodies coffee is a great pick me up during conferences. We pair this perfectly with our homemade cakes, biscuits and colourful and seasonal fruit platters.
What are your winter cravings and summer cravings?
Winter warmers are definitely our homemade soup, it’s such a great addition to the conference lunches and is made using Phantassie organic produce.
Tell us about how your day runs when working on a wedding.
My day during a wedding is always a long but such rewarding day. I start with making sure all deliveries and last minute bits and bobs are in the building. We then get to setting the tables and working with the florist and any other tableware suppliers to bring the couples vision to life. I will make sure the couple are served their canapés either during their photos or after- they can’t miss these! I run service for dinner, making sure all dietaries are served the correct dishes We are on hand to greet the evening guests, open the bar in the evening.I am there until the end making sure the flowers are shared out with the family and that all those shoes kicked off during the dancing are collected!
